This Hawaiian-inspired salmon poke bowl is loaded with fresh vegetables and rich omega-3 fatty acids. It’s fast, simple to prepare, and makes an ideal option for a busy weeknight dinner. Below, I’ll walk you through a clear step-by-step guide to assembling a delicious salmon poke bowl at home.

Having a sister who lives in Hawaii has allowed me to enjoy poke for many years, so I was thrilled when poke shops started appearing all over Vancouver.

Poke (pronounced “POH-kay”) is a traditional Hawaiian dish that can be found almost everywhere in the islands—from supermarkets and restaurants to small beachside stands.

Every time we visit Hawaii, it feels like poke becomes a major part of my diet—probably close to half of what I eat there! There’s nothing better than packing a cooler, grabbing a beach towel and drinks, and spending the day watching surfers while enjoying fresh poke.

Because I love this tradition so much, I wanted to recreate it at home. After gathering the right ingredients and experimenting, I’m excited to share a simple 5-step method for building the perfect poke bowl.

STEP 1: Choosing the Right Fish for Poke

This step is extremely important. Not every type of fish is safe to eat raw.

Fish labeled as “sushi-grade” is specially handled to reduce the risk of parasites. This typically involves deep freezing under strict conditions. The FDA suggests freezing fish at -4°F for about 7 days or -31°F for 15 hours to ensure safety.

In Vancouver, I found several reliable places for sushi-grade seafood, including H-Mart, Fujiya, and Granville Island Market.

My first stop was H-Mart since it was nearby, and the staff was very helpful. They did have sushi-grade salmon, but it was farmed Atlantic salmon. Later, I searched further and found high-quality wild salmon at Longliner Seafoods on Granville Island. It took a bit of effort, but the difference in quality was absolutely worth it.

STEP 2: Selecting a Base Grain

Traditionally, poke bowls are served over short-grain Japanese sushi rice. However, modern versions are much more flexible.

While I love the classic rice base, I decided to switch things up using purple sticky rice (such as Level Ground Trading’s violet rice). Other great options include brown rice, wild rice, quinoa, or even farro if you want something different.

STEP 3: Preparing the Sauce

A flavorful sauce brings everything together.

For this bowl, I used a simple sesame soy dressing, which is a traditional favorite. Another popular variation is spicy tuna-style sauce, made with chili, sriracha, Hawaiian sea salt, and a bit of mayo.

Other creative versions include kimchi-based sauces or wasabi soy blends. There are so many delicious directions you can take depending on your taste.

STEP 4: Choosing Toppings

This is where you can get creative and customize your bowl however you like.

Some of my favorite toppings include:

Creamy avocado slices

Pickled vegetables

Edamame

Thinly shredded cabbage

Carrots

Beets

Toasted sesame seeds

Togarashi spice blend

You can mix and match textures, colors, and flavors to build a vibrant and balanced bowl.

STEP 5: Creating the Right Atmosphere

A poke bowl isn’t just a meal—it’s an experience.

Take your time and enjoy the colors, textures, and freshness of each ingredient. This is a great opportunity for mindful eating.

To enhance the experience, you could play relaxing music like Bob Marley or even ocean wave sounds to bring a little Hawaiian energy into your home.

Health Benefits of Poke Bowls

Salmon

Salmon is rich in omega-3 fatty acids, which support heart and brain health. It also provides high-quality protein that keeps you full and energized.

Avocado

Avocados are packed with vitamin E, an antioxidant that supports healthy skin. They also provide around 6 grams of fiber per half fruit, helping with digestion and fullness.

Edamame

Edamame are young soybeans that offer plant-based protein, fiber, and important nutrients like calcium, iron, and vitamin C.

Have you ever tried poke before? Feel free to share your favorite poke spot or home recipe ideas—there are so many creative ways to enjoy this Hawaiian classic!
